Buttery Pav recipe | Yummiest pav bhaji recipe


Pav Bhaji- Mouthwatering street food of north India made with mixed vegetables and a couple of spices served with lightly toasted and buttery bread (pavs).

Preparation time- 20 mins.
Cooking time- 20 mins.
Servings -4

INGREDIENTS
(1 cup=250ml)

Cooking vegetables for bhaji

3 Medium sized potatoes ( peeled and chopped)
1 Cup cauliflower (finely chopped)
1 Cup pea
2 Medium sized onion (finely chopped)
3 Medium sized tomatoes ( finely chopped)
1/2 Cup Capsicum (finely chopped)
1 Cup Carrots ( finely chopped)
3 Medium sized onion (finely chopped)
1/2 Cup French beans (finely chopped)
2.5 Cups water (for cooking)
3 Tablespoons butter ( Amul Butter tastes delicious in this recipe)
1 Teaspoon jeera
Salt (to taste)
2 Teaspoons ginger garlic paste
2 Green chillies
1 Teaspoon turmeric
1 1/2 Teaspoon Kashmiri red chilli powder
4 Teaspoons pav bhaji masala
2 Cups or as required vegetable stock (water in which vegetables were cooked)

Accompanied with

10 Pavs for serving with bhaji
1 Medium sized onion
1 Lemon
3-4 Tablespoons coriander

How to make the recipe

1. Rinse and peel all of the above-mentioned vegetables, you can also add vegetables of your choice.
2. Add all the mentioned vegetables and pea in a pressure cooker and add 2-2.5 cups of water.
3. Pressure cook for 5-6 whistles ( or 10-12 minutes ).

How to make Bhaji

1. Heat a pan or kadai and add 3 tablespoons of butter.
2. Add 1 teaspoon jeera (cumin seeds)
3. When the cumin seeds start to crackle add 2 medium sized finely chopped onion.
4. Saute the onions till they turn translucent, then add ginger- garlic paste.
5. Mix and saute till the ginger-garlic turns aromatic.
6. Add chopped green chillies and mix well.
7. Add 3 medium sized finely chopped tomatoes and saute them till they are soft and release butter on the sides of the tomatoes.
8. Add salt to taste.
9. Then add chopped capsicum and lightly saute them.
10. Add 1 teaspoon turmeric powder and 1 1/2 teaspoons Kashmiri red chilli powder and mix them.
11. Then add 4 teaspoons of  Pav Bhaji masala, mix it well.
12. Add cooked vegetables and vegetable stock and mix it well.
13. Mash the vegetable with the spoon or potato masher till the bhaji comes to a perfect consistency.
14. Taste and check whether all the spices are perfect. Add spices if required.

Preparing Pavs for the Pav Bhaji

1. Heat a tawa and keep it on low flame, 
2. then add butter( on room temperature) and sprinkle some pav bhaji masala (optional). Mix it well.
3. Place the pav on the butter and pav bhaji masala mixture and lightly toast it.



Serve this yummy  Pav Bhaji on a platter and top it up with butter accompanied with chopped onion and sprinkle some lemon on the chopped onion. Enjoy this yummiest pav bhaji with your family and friends.
